Polish Apple Pancakes are quick to make, no yeast is needed. Racuchy are great as breakfast or a delicious afternoon snack. Kids love them.

Ingredients

  • 2 cups Flour All-Purpose, 300g
  • 2 cups Milk Whole, 470ml
  • 3 Eggs
  • 1 tsp Baking Powder
  • 4 tbsp Powdered Sugar
  • 3-4 Apples
  • Clarified butter or canola oil; for frying

Instructions

  1. Blend together milk, eggs, flour and sugar with a spatula. Aim for smooth, fluffy texture. Add baking powder.

  2. Peel the apples, chop them into tiny chunks. Alternatively, grate the apples on a coarse grater and mix them into batter.

  3. Heat a large nonstick skillet over medium. Lightly coat with butter. Pour a spoon of batter (size of each racuch is up to you!) onto the pan.

  4. Fry each racuch for about 2 minutes, until the bottom is light brown. Loosen with a wooden spatula, turn and cook the other side. 

  5. Top with desired topping: sugar, honey, jam or cream.
