Peel potatoes and onions. Grate them using "small" holes.
Pour the grated mass onto a strainer and gently press. Keep the remaining water!
Mix potato/onion mash with eggs and flour. Add minced garlic (optionally).
Take the container with excess water (from draining the potatoes), remove the liquid gently, leaving potato starch at the bottom. Add that starch into our potato pancake mass.
Add cream, season with salt and pepper and fry on both sides until golden. Serve with sour cream or natural yoghurt.
For sweetened version of these potato pancakes, skip the garlic and add a teaspoon or two of sugar.
